in case you didn't know...
A chef’s knife is typically ground at an angle between 15 and 20 degrees. The smaller the angle, the more razor sharp...also fragile and easily dulled. I like my butcher knives to be at fifteen (15) degrees. Twenty (20) degrees is probably a better angle for most home cooks. It is less aggressive but still plenty sharp for most uses.
A camping knife, on the other hand is a different type of knife. It is going to be ground at 30 degrees, a less fragile degree of sharpness. A camping knife also is going to be physically stouter.
There is an easy fix. Find a place where you can mount a magnetic knife strip or get a knife block to store your sharp knives.The blade should always be put away safely when not in use.

Knife sharpening. I am very, very good at it.
Actually, I am a Butcher by trade. I work at The Country Butcher, in Kennett Square PA. I have 40 years of experience in kitchens and butcher shops. I have spent thousands of hours with a knife in my hand, I learned early on that a sharp knife was essential.
Knife sharpening, like cutting meat, programming a website or building a workbench, gets easier the more you do it. You can tell when someone is good at something, and if "you are good at something, never do it for free" (Heath Ledger, The Dark Knight)
I have always loved knives, from the little camping knife my dad gave me when I was 9, to the almost silly collection of knives and sharpening equipment that I have acquired through the years.
I have 3 different electric machines and a dozen or so different stones, plus files, sanding discs, sharpening steels, leather strops, and more….all in the name of keeping you safe.
It is an old cliche, but it is true, a dull knife really is more dangerous than a sharp one. Because with a dull knife you are forcing your way through, and sooner or later the index finger on your left hand is going to need a bandage, (assuming you are right handed, of course). You are going to be pushing and the knife will break through and nuts! now you are heading for the bandages. Trust me on this, I have worn lots of bandages and gloves through the years.
The big dogs name is Loki, (Thor's brother). I am 5'9", pretty average and he can look me in the eye. A giant bundle of love with a bit of an attitude.
